With the summer heat in full swing, there’s no better time to take full advantage of your pool by hosting a party (or two). If you’re looking for some pool worthy items to make your party even more memorable, here are some ideas to add to your menu.

 

Teriyaki Bacon Wrapped Shrimp

Easy finger foods are perfect for a poolside spread, and these bacon wrapped shrimp will have your friends and family fighting over the last one.

What you need:

  • 1 Pound 31/40 count raw shrimp
  • 1 Pound bacon
  • 16 Ounce can pineapple chunks (drained)
  • 1 cup teriyaki sauce (plus more for dipping)

What to do:

Place bacon on two foil lined baking sheets. Place in over and set to 425 degrees. Cook bacon for 14 to 15 minutes, but take out before it gets crispy. Set aside. Peel shrimp, devein and clean. Cut bacon strips in half. Wrap bacon around one shrimp and a pineapple chunk. Secure with a toothpick and place on a foil lined baking sheet. Brush shrimp bundles with teriyaki sauce and bake in 400 degree oven for 10 minutes. Remove and serve.

Corn, Avocado  & Tomato Quinoa Salad

Having a nutritional, tasty salad that’s easy to make is always a good side dish to add to the table.

What you need:

  • 1½ cup Quinoa
  • 3 cup Chicken Broth
  • 1 ripe avocado, diced
  • 3 Roma tomatoes, diced
  • 2 ears corn, cooked, kernels removed, or 1 cup heated frozen corn
  • 2 tbsp. olive oil
  • ¼ tsp. garlic powder
  • salt & pepper, to taste
  • squeeze of lemon or lime, optional
  • Salsa, optional

What to do:

In a medium-sized pot, combine quinoa and chicken broth. Bring to a boil, cover. Reduce heat to low, and simmer quinoa for 13-15 minutes, or until its translucent, tender and until the broth is absorbed. Gently stir in the avocado, tomatoes, corn, olive oil, garlic powder, salt, and pepper. If desired, add a squeeze of lemon.

Serve warm, with salsa.

Grilled Cumin Lime Chicken With Spinach Pecan Salad

Every pool party needs something grilled along side it. Here’s the perfect menu item for just that.

What you need:

  • 4 thin chicken breasts, boneless/skinless
  • 1/2 tsp kosher salt
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 lime, zested

Salad:

  • 1 lime, juiced
  • 2 tbls honey
  • 1/4-1/2 cup olive oil
  • pinch salt
  • baby spinach
  • pear, peeled and diced
  • chopped pecans

What to do:

Preheat grill to medium high heat.

To make sure chicken cooks quickly, it should be thin. If chicken breasts are thick then butterfly them, but cutting them in half. Otherwise, buy thin chicken breasts.

Combine salt, cumin, garlic powder, and lime zest in a small bowl. Rub the spices evenly over the chicken on both sides. If chicken breasts are very large, then double the rub. Cook boneless chicken breast on one side for about 6 minutes. Flip and cook for an additional 6 minutes. Flip again if necessary and continue cooking until chicken is done. Chicken is done when a thermometer reaches 165F and juices run clear.

Make a side salad while the chicken cooks, by combining lime juice, honey, olive oil, and salt. Mix well. Drizzle over spinach, chopped pears, and pecans.

Strawberry Yogurt Popsicles

Finally, having something sweet and refreshing to cool down during that heat is the best way to end off your menu. These popsicles will do the trick and can be made in advance.

What you need:

  • 1 lb. fresh strawberries, rinsed and hulled
  • 2 cup vanilla-flavoured Greek yogurt

What to do:

Place the strawberries in the bowl of a food processor, cover and pulse a few times – or mash strawberries with a fork or potato masher until strawberries are chunky with only a few bigger pieces remaining. Place the yogurt in a large mixing bowl. Pour the strawberries over the top and gently fold the strawberries into the yogurt. Carefully spoon the mixture into a popsicle mold. Freeze until completely solid and set.
